Of course it was not intended that my pairing party be a competition however, there simply was one entry that stood out from the rest. It was a pairing that consisted of the choicest of ingredients, assembled with great care and an enthusiastic zeal that would fill any gourmet peasant with ravenous delight.

maddie darling...before my countrymen rebel, i must say that the cheese of choice is an Irish Cashel Blue, not the nearly-equally perfect Stilton. the irish amigos can now rest easy :)

...and thank you for the honor, and the kind words. i've always loved food-exploring with you, esp at Raoul's, Yujin (so sad it's gone), and, of course, Gotham. not to mention T-Days at your own home. with the world so much in a swirl, buffeted by storms of change, indecision, and chaos, i will always have, like Mozart, Yeats, and a sweet Strat, your roast beef/cilantro, carrot/hearty mustard roll-ups to see me thru :)
